We love cannellini beans because of their thin skin and creamy interior, and Rancho Gordo's are top-notch. Named for Italian cooking icon Marcella Hazan, these beans will find their way into everything you cook--from pasta e fagioli to beans on toast--or straight out of the pot cooked with a little rosemary.

Pasta Cooking Tips
  • Use a large enough pot so your pasta doesn't stick together.
  • Salt your water aggressively. Not sure how much? Taste it! We use about a tablespoon of Diamond Crystal Kosher salt per quart of water.
  • Remove your pasta from the water before it's totally al dente and SAVE YOUR PASTA WATER!
  • Fresh pasta cooks in about 2 minutes. Dried pasta takes 6 minutes or more.
  • Finish your pasta in your sauce with a ladleful of pasta water.

Five Stars to Rancho Gordo and Semolina Artisanal Pasta

Rancho Gordo's heirloom beans are simply magnificent. YES, they are more expensive than either canned beans or supermarket dried beans, but totally worth the $$ and prep time.
Cannellini beans are THE classic white bean and Rancho Gordo’s are spectacular.
I am beyond happy that Semolina Artisanal Pasta, right here in my neighborhood, stocks Rancho Gordo products. In one shopping outing I get terrific fresh pasta and my favorite beans!
