It's hard to know how good dried pasta can be until you taste this strozzapreti, along with the other Semolina Artisanal offerings. I've searched out pasta for years (the way I do for coffee) seeking perfection, because... why not? And no pasta I've ever found can touch this stuff. Cooked right (you will need to tend it to get to perfectly al dente) it has a depth and toothy creaminess that holds its structure as it melts in your mouth, complementing whatever sauce you choose to lay on it. This product is pasta paradise.
This pasta definitely has some good uses and tastes great like all the pasta from here does but if you don't have time to make something fancy or just elaborate it doesn't work as well.
I'm sorry you didn't love this pasta shape as much as we do. I've always found it very versatile--from a simple pasta al limone to a hearty ragù--but we all have our own palates. Thanks for letting us feed you!
Most folks have never heard of Strozzapreti, or priest stranglers. The are perfect for both tomato and cream sauces. I last served them under my Cheez-Its meatballs in marinara sauce. Everyone has loved the look, taste, and mouthfeel of this pasta. Recipe available.
The flavor and texture are beyond my expectations and I really like the shape which is different than any other pasta I've had before.
