Eating sustainably is one of our core values here at Semolina, and so we try to support others who do the same. Wildfish Cannery in Klawock, Alaska, embodies sustainability, sourcing only wild-caught, sustainable Alaska seafood harvested by the fishermen and divers from Alaska's responsibly-managed, community-based fisheries. The folks at Wildfish then honor that work, by hand-slicing, seasoning and smoking the fish, and handpicking it to capture its perfection and to maintain quality control. The smoked Coho has just enough garlic and black pepper to eat straight from the tin, but of course it's delicious tossed with pasta al limone and vegetables for an easy weeknight dinner.
