St. Louis-based Salume Beddu is a labor of love from fellow Mozza alum Mark Sanfilippo. His handcrafted salumi is made using Missouri-raised, hormone-free Berkshire pork, without fillers. Beddu's Finocchiona is the best I've had of this Tuscan-style hard salame in a long time. The toasted fennel quality is forward without overpowering, and the blend of red wine, black pepper and garlic complement the porkiness perfectly.
