Rinci Pickled Sea Fennel
Founded in 2015 in the Conero Regional Park, under the shadow of Monte Conero, Rinci offers high-quality gastronomic creations, reimagining the flavor of tradition with their own signature spin.
In their own words, the company produces vegetable preserves and sauces focused on providing an irreplaceable sensory experience.
Rinci's Pickled Sea Fennel, known as paccasassi or spaccasassi in the local dialect, is a plant which grows in coastal regions of Italy. Robust in their build, these plants take root in rocky crags overlooking the Adriatic sea. Once picked, these intrepid herbs can be used to enhance any number of appetizers, or added to meat, salami, and fish dishes to provide an adventurous garnish.
