Cotechino is an Italian pork sausage traditionally served on New Year's Eve with lentils. Its round shape, and that of the lentils, resemble coins, and it is supposed to bring good luck and prosperity in the new year. While a fresh cotechino needs to be simmered for hours and hours, this is pre-cooked, and needs just to be seared and warmed for something hearty and delicious. Limited availability.
