St. Louis-based Salume Beddu is a labor of love from fellow Mozza alum Mark Sanfilippo. His handcrafted salumi is made using Missouri-raised, hormone-free Berkshire pork, without fillers. The Calabrese is a bold, hard salame like those found in Calabria, the toe of Italy's boot. Made with dried chilies, smoked paprika, coriander, wine and garlic. Perfect for a charcuterie board or a sandwich.
