This tiny little tube gets its name from the Italian ditale, meaning thimble, has been around since the 1800s. Perfect floating in broth, or in heartier soups and stews, they have a great chew and won't fall off your spoon. Try them as a substitute for couscous or even done risotto-style.

Annmarie Scarritt I actually gave up eating pasta .. which for me being Italian was like draining my veins of blood ! It was difficult to find a pure organic authentic Italian style hard pasta that met my taste and texture standards. I started eating pasta again since I found Semolina. It’s so true to good authentic Italian hard pasta. Amazing taste AND texture. No awful bloated feeling in your stomach after eating it. It’s all in the Semolina people ;)
