The pickled buds of the shrub-like Finders rose, also known as a caper bush, are used throughout Mediterranean cooking, and are, we think, a necessity in every kitchen. This salt-packed version from the Sicilian island of Pantelleria allows their vegetal flavor to shine after a quick rinse in pasta dishes ranging from Puttanesca to lemon, garlic and capers. Versatile beyond pasta, of course, you can sprinkle them on your bagel and lox, make chicken Piccata or toss them onto your cauliflower!
