Nickerson Boned Salt Cod (Baccala)
Salt cod zeppole were a Christmas staple in my husband's family growing up, but as he got older the tradition faded away. So when we celebrated our first Christmas together on the West Coast, I decided to bring them back, and now my kids (and brother-in-law) giddily await these savory "doughnuts." Of course, zeppole aren't the only reason to have salted cod on hand, but they are my favorite. Don't forget to soak the fish for at least 24 hours to remove the salt and rehydrate.
