Possibly the best colatura di alici we've ever had. Armatore's comes from Cetara, the heart of anchovy fishing on Italy's Amalfi Coast. Within hours of being plucked from the water they're processed, and then left to age and develop for at least two years in traditional casks. The result is an elixir that is a heady, strong homage to the ocean. Just a few drops can add depth to a sauce, and a drizzle over lemony pasta is a true luxury.

Pasta Cooking Tips
  • Use a large enough pot so your pasta doesn't stick together.
  • Salt your water aggressively. Not sure how much? Taste it! We use about a tablespoon of Diamond Crystal Kosher salt per quart of water.
  • Remove your pasta from the water before it's totally al dente and SAVE YOUR PASTA WATER!
  • Fresh pasta cooks in about 2 minutes. Dried pasta takes 6 minutes or more.
  • Finish your pasta in your sauce with a ladleful of pasta water.

Italian Umami

I use this just as you would an Asian fish sauce. It adds depth to everything I cook. Great in soups and Pasta sauce.
