Summer Recipe Contest: Eggplant and Pasta

It's National Farmers' Market Week, and we couldn't think of a better way to celebrate  our favorite farmers than with a recipe contest highlighting one of summer's unsung heroes: the eggplant. While the eggplant's history can be traced back to modern day Burma, it's often associated with Mediterranean food and its creamy texture pairs incredibly well with toothy pastas (like in our Grilled Pasta alla Norma recipe last week). How do you eggplant?

It's easy to participate in our contest. All you need is some pasta (preferably Semolina Artisanal Pasta) and your favorite variety of eggplant and you're on your way!
